The flavors of Casa Fabbrini

Home cooking and happiness in Tuscany

'Casa' and 'cucina': the two words which best describe Casa Fabbrini, a country guest house just outside the little Tuscan spa town of San Casciano dei Bagni.
'Casa', or home, that is just what this finely restored 17th century farmhouse in Val d'Orcia feels like. 'Cucina', or cooking, is what Paola and Giorgio, the couple who own and run the place, do best.

A family passion - for cooking

Paola and Giorgio's passion for food is an incredibly contagious one and, in fact, both the making and eating of food are an essential part of the Casa Fabbrini experience.
Stay at Casa Fabbrini and you'll be treated to two very different types of cuisine: that which is prepared by Paola and that prepared by Giorgio. A sophisticated, contemporary lady, in the kitchen, Paola is your typical Italian mamma, whose simple Tuscan dishes taste of the love which has been used to make them.
Giorgio, who for 30 years worked as pediatric surgeon at Rome's prestigious Bambin Gesù hospital, is a vocational chef, whose creative interpretations of classic Italian dishes are as unexpected as they are delicious.

Zero km, 100% taste

The majority of the ingredients you'll find on your plate will have been produced on the land surrounding Casa Fabbrini. The extra virgin olive oil is made with the olives grown in the groves surrounding the farmhouse; the jams served at breakfast are made with fruit from the family orchard; the vegetables served at dinner time are cultivated in the kitchen garden and picked just before being cooked.

Secrets of a country kitchen

Casa Fabbrini's food is so fabulous, it's only natural that customers are keen to learn how to make the same dishes for themselves when they get back home. Available to guests and non residents alike, Casa Fabbrini's Country Cooking Courses last for a full 5 days. There are four different programs, one for each season of the year.

Family dinners around the "social table"

Designed as a place in which to enjoy the simple pleasures of life, at Casa Fabbrini everybody eats together, sitting around the one large communal table, more often than not in the company of a breathtakingly beautiful Tuscan sunset.
Featuring dishes the names of which, alone, are enough to make your mouth water, the menu might easily include traditional Tuscan specialties such as tomato and bread soup, taglierini pasta with herbs, Chianina beef steak, venison with polenta, and pheasant bouillon. Desserts are, naturally, all homemade.
At breakfast time, holidaymakers are treated to an assortment of jams, yogurts, fruit tarts, and piping hot pastries with apple, pine nuts and rosehip. The perfect way to start your day in the countryside surrounding Siena!
