Sicilian cooking represents a synthesis of the gastronomic traditions introduced by those civilisations which, through the centuries, settled on the island – from the ancient Greeks and Romans to Arabs, Normans, and many others. This fusion of cultures and customs results in a cuisine featuring cuscus, ragù cooked with sardines, saffron, pine-nuts, sultanas and wild fennel, pan-fried swordfish and, of course, cheeses like the pecorino of Enna, and the caciocavallo of Ragusa. Sicily is also the land of exquisite confectionary where colours and perfumes combine to produce deliciously sweet cakes such as cassata and cannoli - famous throughout the world.
The D.O.C. wines of Sicily are: Bianco d’Alcamo, Cerasuolo di Vittoria, Etna, Moscato di Faro, Marsala and Malvasia di Lipari.
