Puglia-Apulia Restaurants
Apuglia is known for its many varieties of pasta: recchietelle, laganelle, fusilli, troccoli, fenesecche, mignuicchie, strascinato and, of course, the famous orecchiette, traditionally served with turnip tops or “cime di rapa”. Less well known, but, nevertheless, just as delicious, is la tiella either with potatoes, olives, and onions or with mushrooms, rice, fish and lamb. Lamb cooked “al forno” is the tastiest of the meat dishes, whilst the incapriata is a superb thick soup made from broad beans. As one would expect, there is an abundance of fresh sea food in every single market, offering a fabulous display of mussels, clams, oysters as well as fish straight from the Adriatic sea
Apuglia boasts a host of D.O.C. wines including Castel del Monte Bianco, Gavina, Locorotondo, Moscato di Trani, Primitivo di Mandria, Rosso di Cerignola, Salice Talentino e Gioia del Colle.
