Helene Markart's mountain munches
Located in the town of Villabassa, one of Trentino Alto Adige's historic tourist destinations, close to Dobbiaco and the Dolomite Superski, Hotel Adller is an icon of hospitality in Alta Pusteria, which has been effortlessly transmitting the warmth of a home-from-home for some four hundred years.
Famous not only for the beauty of the surrounding landscapes and the romantic atmosphere which pervades this part of Val Pusteria, Hotel Adler is a well known gourmet paradise, attracting food lovers from every corner of the globe, all eager to savor the authentic flavors of Trentino Alto Adige.
The hotel's owner, Helene Markart, is one of the most talented chefs in the area, having inherited both her passion for the local cuisine and an impressive collection of age-old family recipes from her beloved grandmother, Aloisa.
Childhood memories, adult ambitions
Helene Markart spent much of her childhood in one of Val di Grovo's traditional "maso" cottages. The herb garden, grazing cows, the table laid in front of the Tyrolean fireplace, and the snow covered landscapes of her infancy have become precious, indelible memories.
After having worked first in the kitchens of her Uncle's Jaufentaler Hof restaurant and then in those of the Hilton in Munich and the Hotel Schwarzer Adler in Vipiteno, Helene became the proud owner of Hotel Adler and it is here that she is finally able to make the most of the gastronomic experience acquired and, at the same time pay homage to her family and her homeland.
As she reveals in the preface of her book "Cucina Magica delle Dolomiti" (The magical cuisine of the Dolomites), Helene grew up studying the traditional local recipes with the aim of some day transforming them into spectacular contemporary cuisine
Markart's mountain menus
In the hotel's cozy dining room, with its Tyrolean "stube", guests are treated to wonderfully fragrant mountain food, in the form of Helene's "Nettle and Barley Soup" or Val Pusteria's "Formaggio Grigio" cheese.
The second courses, such as the "Venison Medallions with Panpepato Sauce" and "Bread and Potato Polpettine", best reveal Helene's creative vein and her ability to reflect the area's culinary traditions, whilst adding her own personal touches to each and every dish.
As for the desserts, guests will have a hard time choosing between the chef's legendary "Torta della Nonna Aloisa", tangy "Rhubarb Tart" and deliciously sweet "Chestnut Dumplings".
