In Trentino Alto Adige, in the heart of the Dolomites, the cooking has as its symbol, the segale bread and the smoked ham which normally accompanies dishes such as the Schlutzer, a kind of ravioli made with the segale flour, there is the Knodel better known as Canederli which is made a base of bread, eggs and milk. In Trentino the cooking is best known for its soups, game meats accompanied by polenta, with abundant milk and forest products.
