Oliver Glowig
From Dusseldorf to Capri, with a love of the Mediterranean.
The chef, Oliver Glowig is a German with a decidedly Mediterranean heart. Within three years of his arrival at the L'Olivo Restaurant, in the Capri Palace Hotel and Spa, the restaurant was awarded its first Michelin Star, this was followed by a second in November 2008.
Commanding a team of 22, Glowig draws much of the inspiration for his delicious, light meals from the ancient culinary traditions of Capri. Few chefs combine cooking techniques and ingredients with such mastery - for example: in Glowig's bitter Neaplolitan spinach and spicy fish ragout filled gragnano pasta with buffalo yoghurt and grilled scallop, the intense flavour of the ragout is obtained by slow cooking, which is usually only used with meat. Glowig's Seafood Mosaic' is another memorable gastronomic experience - 9 spoonfuls, each a different mouthful, containing tuna, octopus, scampi, truffle and squid.
The inclusion of the Capri Palace Hotel and Spa in the Conde Nast Traveller's Best Hotel for Food Gold List 2007 was entirely due to Oliver Glowig. The exquisite presentation of the food in the L'Olivo reflects the dining room's elegant interior, the exclusive textiles, designed by Loro Piana and the hand-blown Murano glasses by Moretti.
