A Question of Taste

The art of Italian cooking in Spoleto's culinary academy.

Spoleto is an Umbrian city famous for its Bridge of towers, Church of San Pietro and for its wonderfully conserved medieval center. Just north of the historic center, on a road running parallel to the ancient Via Flaminia, is Villa Redenta, a splendid 19th century edifice which is now home to the International Culinary Academy. Founded in 2008 to promote the fine art of Italian cooking, the academy organizes both intensive courses for professional chefs and lessons for absolute beginners keen to learn a little more about the skills and techniques of Haute Cuisine.

To guarantee maximum efficiency, Villa Redenta's magnificent halls have been equipped with all the latest in modern technology: including a Cooking Auditorium, and individual rooms devoted to the preparation of pastisserie, baked goods, fresh pasta, ice-cream, meat, fish and vegetable dishes. Another auditorium, with a connecting library and reading rooms, is used for the academy's theoretical lessons. In the central part of the villa there is an area devoted to wine, complete with tasting rooms and cellar.

The academy's courses are not just about teaching recipes or cooking techniques they are also orientated towards the creation of taste experts. One of the academy's most interesting initiatives is dedicated to the world of cheese: a weekend long course held by a master fromager. Starting with a wealth of technical information concerning the different types of milk, the role of micro-organisms, ripening, rennet, curd treatment, cooking, molding and aging; the course goes on to investigate how cheese should be tasted, and how to evaluate both the external and internal parts of the cheese. The last part of the course investigates the role of cheese in Italian gastronomy and its classification, the various cutting techniques, its conservation, and the most suitable accompaniments for vegetables, bread, fruit, wine and beer. Lessons conclude with a series of tasting laboratories which, for many, are the highlight of the weekend.
