Trattoria Gostilna Devetak Savogna d'Isonzo

As from 1870 the Devetak family has been running the restaurant. It is situated in San Michele del Carso, a small village a few kilometers far from the Italian-Slovenian border. This area saw the memorable, historical and tragic battles of World War I. On the top the village there is a memorial monument with a museum and the caves that the soldiers of the Italian and Austrian-Hungarian armies dug in the rock.
In the hall, my sister Nerina is in charge of the service. After 17 years training with mother Michela, my wife Gabriella (who was born in Brescia) runsb the kitchen and she is self-taught and fond of the local cooking culture. Being so close to the borders, Austria and Slovenia really influenced the local cooking traditions of the restaurant. Keeping the traditional "gostilna" atmosphere during the years, the restaurant offers its guests the best Carso, Slovenian and Middle European raditional dishes combining them with new flavours of the present time. House-made fresh bread and pasta are never missing and they are stuffed with vegetables picked ud in the family garden worked by my father Renato (who has got a farm) and my brother-in-law Claudio;
The menu follows strictly the seasons course, well combining with wines (more than 600 labels coming from all over the world) and the Carso virgin-olive oil. We have got not only a wine list, but also a distillates list with more than 500 liqueurs, especially whisky. Among the most traditional receipts, it is counted the hand cut Carso ham and the "selinka", a wegetables soup with celery and pork roasted in oven for at least 6 hours. Moreover we offer the saucepan potatoes, our game served with fruit or the Carso beef and pork fillet, the typical cakes such as the "gibanica" (ghibaniza), the "øtruklji kuhani" and the "bela potica", all hand down from to generation to generation.
The restaurant is divided in three smoking and no smoking rooms of about 18, 25 an 35 seats. There also are a veranda where it is pleasant dining outside, a tavern the right place where smoking a cigar and a wine cellar dug in the Carso rock. Toilets for handicapped people, conditioning and depured air and a guarded wide park car are also available.
